From previous threads I have learned that the head stud replacement will cost around $2,500 with labor. My big concern is getting the right mechanic to do the work. Should I have the mechanic check the head and block surfaces for flatness ? Should the process include machining the surfaces so the new connection will be true and tight ?
I live in central New Jersey. Does anyone know of a reputable shop that does this work ?

Yes the heads need to be checked for flatness and cannot be more than .002" out of tolerance. If they are they Sometimes can be machined IIRC .0005" Only or they are thrown out and replaced with new. FMC will not remachine them period if they are out of spec by .002" they throw them out and replace them. These heads are very touchy when it comes to machining them and you can go to far quickly. I know Matt (PSD 60L Fx4) has machined a set but he said it is rare that you can remove enough material to make them flat before they are junk.

upgrade to ARP head studs
why put back some failure prone parts
just my Opinion
that is what I will do when my engine needs the upgrade!
