Whatever it'll run on without detonation/pinging. Any more is a waste of money.

gas

I ran the cheapest gas I could find in my '72 Bronco with the 302 and it always seemed happy. I haven't had my '76 long enough to know what it likes, but 89 seems to be fine. The 302 in the EB is very accomidating when it comes to gas. I would guess this is mainly because of the low compression and modest timing.
