The vacuum pump needs to be connected to the center port (yellow hose) of a manifold gauge set and both valves opened for evacuation. Evacuating and charging by swapping hoses around will allow air into the system that will cause cooling issues. This is especially important if you are using a "venturi" type vacum pump (air operated) as they leave residual air in the system to begin with.
Evacuation is done through both ports, Charging is done through the low side only.
Harbor Freight has a gauge set for about $35 that is good for DIY work, or you can often rent a manifold gauge set from a local chain parts store (Auto Zone, Advance, etc.)

Harbor Freight carries a good bit of junk, but there are a lot of jewels there if you know what to look for. They have an AC flush gun kit for about $25 that works really good for DIY.
I see you're in South Fla. You need to give your AC all of the help you can down there. I'd recommend a new accumulator for about $30, it makes a big difference. You would also be amazed at the difference a new fan clutch would make at idle and low speed. Think about it.
