I can't remember what set-up 'Fenders was running on his 53 but I did find the recommendations in the Mid-Fifty catalog. "Starting with the shortest, keep #1, remove #2, keep #3, remove #4, keep #5, remove #6, keep #7 but cut off the wrap 1 1/2" from the eye. " With reversed eye springs this is supposed to drop the rear 3 to 3 1/2".
Assuming that you followed the above or something similar, it would depend on what you want and how the truck feels now.
If the ride is already soft, I would remove the short one to drop it a little more but maintain as many long springs as possible.
If the ride is still too firm, I would look at removing one of the longer ones as this will tend to soften the ride. I would not remove the spring immediately under the main spring (#7 above).

Thanks Kent. I did follow the Mid Fifty recomendation originally. Then I removed one more to have 5 leafs. Ride heigth is ok, ride could be softer. I guess I will remove one of the longer ones and see what results. Joe
I would remove a mid size one or the other one from the bottom. I'm running 3 in my 56 and the back end is still stiff and a nice ride. I had 2, and that made it a little bouncy. With running on 3, I wanted to keep as many long leafs as possible to give the main spring more support, they tend to crack if your lacking support there.
Joe, removing the leafs will soften the ride up. If your concerned about ride height, you can always add a spacer plate in. In otherwords, you can run 3 leafs, but to keep your ride height, put a spacer, similar to lowering blocks in and that will keep your ride height up but still allow you the softer ride. Good luck.
