Think I'm gonna try the beer in the butt chicken recipe this weekend.
i do beer can chicken all the time. drink half a can of pbr, shove the can up the chickens butt and set it on the grill. use a paint brush and coat the chicken with bbq sauce, damn good stuff.
I'd love to try the same recipe, execpt with a keg and a cow.
I tell you what- the Heini keg can(the singles, not the 12 ouncers) is perfect for about a 7-9 lb turkey if your grill can hold it. Inject that bad boy like your gonna deep fry it stuff the can in sit 'er up right and baste it w/ a mix of stubb's bbq sauce, melted butter, salt, and pepper(fresh ground). cover and rebaste about every 20 minutes. Bout 90-120 mins. and ENJOY!!!! mmmmmmmmm good!
Clobber it between the eyes, drag it slowly through the kitchen. . . outside onto the grill, until it stops screaming.
Oh, wait a minute . . . this isn't an episode of The Sopranos.
Take a good filet or tenderloin and grill it at high heat to medium-rare to medium, some potatos and onions, some fresh rolls and a touch of L & P Worchestershire and/or A-1.
A couple of slices of tomato, or a fresh salad and Ranch dressing.
A tall glass of unsweetened ice tea w/a slice of lemon.
Here's a little tip for all you grillmeisters- beef today is raised too lean for a flavorful steak. Towards the end of the grilling, brush some butter on the steaks. It will add that 'fat' flavor, and flare up nicely (watch the eyebrows!) I learned this from a high-end steak restaurant in town.
That's why I go for at least a "Choice" grade. Once in a blue moon I'll find a "Select" with some half way decent marbling (more than likely labeled incorrectly). I often can't tell a visual difference in what is marked Prime and Choice around here.
I can't remember the name of the place, but we stopped by a ranch in north Tx that sold organic grass fed beef (supposed to be healthier). It definitely had a different flavor, reminded me of the steaks in Argentina. Not as much marbling, but man they were good. It wasn't cheap for most of the cuts, but we got some skirt steaks (fajita) for a song. It seems most of their clientele wants the better cuts only.
Any of ya'll costco fans ever been to a "whole foods" market?
Best meat selection and the most vast cut selection in my neck of the woods. Have'nt had the chance to go to costco, don't have one around that I know of.
