Lightbulb Idling very strange

I have an 84 Ford F250 3/4 4x4 pickup with a 351 windsor. Recently I changed the stock 2 barrel EGR to an Edelbrock aluminum manifold, Carb, and cam. I know the cam the size I put in is supposed to make it idle a little rough but thats not the problem. I have the carb all setup and it idles good in the driveway all the way through warm up. When I drive it and I pound the gas a little bit hard the idle drops way down to around 600rpm. then it wont come back up till I shut the truck off and restart it.... after I let it cool down for a minute. It only does it when I drive it! I dont know what could cause it! I though maybe a vacum leak but there isnt any hissing and no bubbles from any joints! Everything is plugged. The carb is an Edelbrock Performer #1406 600cfm electric choke (its hooked up and works). Please help! Matt

It will rev up in the driveway? But it won't when you are driving it?

No, I can rev it and do anything I want to. When I drive it and mash it on the floor for a few seconds it drops the idle WAY low. But I think I may have fixed the problem. I took the air bleed screws out and they were dirty so I cleaned em off and blasted the port clear with air. So right now it has not done it to me once for a few hours of driving.
