My father in law has a 1990 GMC full size conversion van that has an erratic temp guage. I works correctly until you put the heater on vent or bi-lev then it sweeps up to the peak temp then back to the actual temp over and over. I know that it isn't overheating it is just a glich or somthing. I rip apart the entire dash/engine compartment checking everywhere for shorts and I put a new temp sensor in along with a new t-stat and hoses. As soon as you take it off these to settings it fuctions completly normal. I can't figure it out.
I will give you a Ford answer (which might work on a Chevy).
If there is a bad ground in the dash somewhere, turning things on & off can affect the gages. Doing other mechanical things, including heater controls, clutch/brake, and driving on a rougn road can all affect the ground, hence affect the gage.
P.S.: I like your stable - I only have two Ford pickups at the moment.
