I have a 1990 Bronco XLT with a 351.
After finding water in my 6th cylinder I pulled the top off and found that the gasket between the intake and the head had blown thru from the coolant passage into the intake passage of the head.
After putting new gaskets in and putting it all back together I took it for a test drive and within 10 min I lost oil pressure.
Could this be anything other than an oil pump gone bad?
During the Christmas layoff at my work I intend on pulling the oil pan and putting another one in if I can't think of anything else.
Were there any obvious leaks in the oiling system? If its not external, check internal immediately. Not sure about the Ford engine but I know some Cadi engines the head gasket fits just as well upside down but doesn't close one oil galley passage from head to block and leaves it to get into the water galleys. (unfortunately thats a first hand experience).
I would be concerned with water possilby having gotten into the oil as well. If it got into a cylinder, it could get into the crankcase too. With luck, it might be that the sump pulled the sludge up into it and clogged the pump. However, water in the oil is never a pretty picture. Check the pan and cylinder heads where ever oil "settles" for ugly grey sludge. It will sink under regular oil so poke around looking for it. You may be looking at cleaning oil galleys etc. inside the motor which might as well constitute a rebuild. Don't mean to sound like the voice of doom but its something you may have to consider if there are no obvious leaks in the system.
I'd check the easy stuff first like the gauge. Maybe the wires were some how disturbed when you had the head off or it could just be a coincidence that the sending unit pooped out.

I had a simillar problem after changing oil. Had no oil pressure or it was very low, basically between 0 and 5 psi. Turns out that it was the oil filter itself that was causing the low or no oil pressure. So you might want to check the filter or replace it.
But, worst case senerio, since the oil and water don't mix, that sluge may have gotten into the oil valleys some where inside the engine and you might be looking into a complete overhaul
I, also, have a 1990 Eddie bauer with the 351W. At just over 115,648 miles, I had to pull the engine out and do a complete engine rebuild. Accually blew a hole through the top of #5 piston, and believe it or not it was still running, but alot of blue, white, and brown smoke, though. The tip(electrode) of the spark plug was melted off. Could have been cleaned up at .10 over bore. But no standard piston sizes in that range, so I ended up going .30 over on bore. I, also, put in an Edelbrock cam & lifters, along with their upper and lower manifold, and throttle body, and replaced the air filter box with the K&N filter system.
It has about 186k miles. And when I had the head off there wasn't any holes in the piston.
When I crank it up there is very little oil pressure (about 10psi) it will bring oil up to the rockers but if you hit the gas the pressure drops off. Also there is no smoke when it is running.
Could be something getting into the oil pump screen to block flow when accelerating. Might want to check the connection for the oil pressure switch. Other than that I'm not sure what else other than over haul.
I had this happen to me with a 350 chevy I had in highschool. One of my pistons was melted on one side which caused my oil pressure to be at about 20 at start up then it would drop to zero when I would give it gas.I thought it was the oil pump untill I tore down the motor and found the piston melted.
Well I have oil pressure again. I replaced the oil pump but I don't think that was the problem.
When I pulled the oil pan there was old RTV sucked up next to oil intake tube blocking the screen screen. I took it out cleaned it up installed the new pump because I already bought it. When I cranked it up the oil pressure jumped up to "m" on normal.
