What should I do?
I got a 360,or 390 to replace the knocking one in my truck. I'm going to replace all the gaskets, should I put new bearing in it while I have it out? Should I replace the oil pump also?

LIke Bear said, an oil pump is always a good idea. I'd also put in a new oil pump driveshaft. If you're comfortable measuring and installing new bearings, then go for it. I installed new mains on my old FE and brought the hot pressure up 20 lbs.
Give the timing chain a good look for excess play as well. Run the crank around so one side of the chain is snug and the other has some slack. If you've got more than half an inch of slack, repacing the chain is advisable.
