oiling
My old 390 has about 40-45 pounds of pressure when I fire it up cold, 30-35 pounds at 2500rpm hot, and about ten pounds hot at idle. These numbers sound low, but my 390 has been running for 37 years.
Let us know what you find out.
You are great and wise, I will try it, although I have an autometer mechinical gauge indash, and it has oil in the line, and I have some spatter on the fender wells with the valve covers off, but not alot, how much should there be?
But with that said..Oil pressure on FE's is not uncommen too run low..But you should have at leat 10psi at idle when hot...and some run higher...I think mine run at about 15 to 18 on a hot day at an idle!! When you have the engine rebuilt did you get the Tolerence spec sheet from the rebuilder? thats always nice to know...
But bottom line sounds Like timing is off..for you to get the knock..I would bring #1 up to TDC.. and make sure the rotor is point at that plug wire..and if its a stock motor try just 6* on the timing...for starters.. and if it been detonating to long ? you could have wrist pim slap? I dont know I didnt build the motor..Just things I would check..and then go to you Oiling situation..

Let's not get carried away now... I'm just the first to reply! Like RapidRuss said, the oil line to the guage could be plugged, the guage could be off just a bit, or you could have standard FE oil pressure. Great cold, but could be better hot!
If you're getting oil spatter on the fenders from idling the engine with the valve covers off, then I would presume it's oiling correctly.
As far as the rattling when accelerating, it could be a variety of things, including detonation. Once you're positive the oiling system is working correctly, I would try to get the timing sorted out before making any big plans on driving this truck. If what you're hearing is detonation, you're timing is too far advanced.
Good luck and keep those posts coming.
