Wheels and Back-spacing...HELP??

Wheels and Back-spacing...HELP??
I'm trying to decide on wheels for my F350 (single wheel), and I've got it narrowed down to MotoMetal 954 or American Eagle 114...but...I'm having trouble with back-spacing, and what I want/need.
I'm going with 20" wheels.
I'm okay with the wheels sticking out an inch or 2 more than stock...that's no big deal. But I'm seeing back-spacing numbers from -6 to -1...and that seems like a big difference. I don't want half the freaking tire sticking out.
Also...I'm seeing 2 common widths - 20x8.5 and 20x10. I'm going with a 305/55/20 Nitto Terra Grappler. Will either of these rim sizes work for me?
