Need a diagnosis

I've been running my propane converted truck with no thermostat for several months with no problems. We recently had a cold snap that forced me to put one in because propane systems freeze without enough heat. I spent the extra for a fail-safe thermostat (fails in open position). For 3 or 4 days the truck's performance improved but the other day I was driving home from work and it's health quickly deteriorated to the point where I was overheating and I had no power. Now when I start her up she can barely hold idle and there's absolutely no power in gear. My first thought is that somehow the extra heat/pressure has either revealed a pre-existing problem or caused a new one. Any thoughts as to what I should check first? The only thing I've done so far is change the PCV valve but that didn't help.

Thermostats really shouldn't cause that much trouble. Is there anything that could have been tampered with on the carb or any other possible problems?

There is no carb because it's propane. The mixer has an adjusting screw presumably for the air/fuel mix. I played with that and if I set it to wide-open there is a slight improvement but not nearly enough. At idle it shakes and bucks like mad. When I last drove it, it seemed to do better when I was going downhill. When going uphill or trying to accelerate the engine rumble gets way deeper (low note sound) and it taps like a diesel. When I slow down to stop I have to keep the gas on or it feels like it will stall.
