Will this work - exhaust
Dual 2.25 - two each of these:

This is a stock truck. I will probably do a straight up timing chain, and maybe MAF conversion, but that's it. Not much towing, but almost always loaded, and fairly heavy. No freeway friving, but lots of driving through fields and gravel roads, ect.

Dual cats will help eliminate the exhaust restriction found in the fuelie application. Removing the cat is not only irresponsible but can foul up your computers ability to manage the engine if you have an OBD II vehicle with the O2 sensors before and aft of the convertor.
Properly sized cats only cost 7 to 10 HP in an application like the fuelie 460.
And as a side note all fuelie engines have the straight up timing set installed from the factory.
Adding some additional ignition lead will help power and mileage too.

I am not too interested in doing something illegal - especially if I can make it legal for $100 or $150.
Any other advice for some better driveability?

id say get some decent headers and port match the exhaust to the headers, and port match the intake to the heads... maybe port the exhaust too... that should help alot, and maybe once you get it swapped over to mass air you could throw an rv cam in

Unlike the early passenger car castings...
the fuelie castings have a pretty darned good exhaust port. It is the intake side that is some what restricted.
Port matching the intake manifold runner exits to the heads is a waste of time because it bell mouths the intake tract at the flange. This cross sectional increase is not good for flow or maintaining velocity. Depending on year a larger intake valve will help more so than anything because the fuelie heads have a 2" intake in the E7TE's and 2.1" in the F3TE's. For grunt the stock heads are pretty good though.
Headers are never a bad thing though.
