Wires

I'm swapping an EFI 300 from a '95 in place of the 1bbl 300 thats in my '84.

I pulled all the wiring from under the hood and I know there's some there I don't need but I havn't gotten that far.

I also pulled the computer but I'm wondering about the other two connections at the firewall, do I need the stuff under the dash that those go to?

One of them is for the taillights, fuel pumps, fuel gauges, Anti-Lock brakes, VSS sensor and the transmission.
The other one is for engine control, lights on the front, air bag and power to the cab and so on.
The first one you may be able to do without but your going to have to splice into the wires of the second one someplace to control the engine and to know what is going on.
