Alright so this might be a stupid question and I apologize ahead of time, but can I wire 2 sets of offroad lights (4lights total) to the one switch? If not WHY? and what are some hazards by doing so? Any insight would be helpful. Thanks

That all depends upon how you do it. Off Road lights draw quite a bit of amperage which is why a relay is used in the circuit. If you didn't use a relay and had the lights drawing full power right through the switch, then there would be a possibility of an electrical fire due to that overload.
If you want to wire two sets, you can either use two relay's switched off the one switch with each relay controlling two lights or you can go to a parts store or Radio Shack and see if they have a relay big enough to handle the amperage draw your lights require. They will need to know the wattage from each light to calculate the amperage draw and find you a relay that can handle it.
