Will going from 255/70/16 to 265/75/16 affect the speedometer?

Yes, it will but it can be adjusted in the computer.

Id say between 5-10mph leaning towards 5. I can adjust them with my computer at ford, I'm not shure if or how it is done otherwise.

it's actually a percentage value, not a set standard like 5 mph. Your speedo calibration should be 5.3 percent greater value than it is now.
