I have a 1979 Ranchero GT I just put a 302 i built in, the headlights shut off and come back on at random intervals. No matter if its interstate or in town, idle or at speed. They will click off, and after a few moments 30sec-1min, click back on. 'Tis driving me nuts, 8-). any and all help appreciated.

You either hooked an extra load to the Headlight wiring (more lights) or you have a bad Headlight switch.
Something is making the headlight relay go off and come back on. Most time this is a short circuit the the headlight circuit. The circuit is pulling to many amps. (overloaded, as one of the posters above commented)
The wiring to the headlights will have to be check out. A wire could have been crushed while changing out the engine, etc. Very hard to tell you exactly where to look.
