if u can't get them off by unbolting, or cutting them off with a grinder there is only one more way and that is a cutting torch but if u use a cutting torch cut the nut off of the bottom of the bolt n then take a punch n hammer and knock them up and have someone crab them with a pair of pliers.

There is a better way, if you have a welder.
Measure the distance from one bolt to the other, center to center and cut a piece of flat bar to that length.
weld each end of the bar to the head of a bed bolt, this will keep the bolts from spinning while you remove the nuts from underneath.and then you can reuse them after cleaning up the heads.
another option is to tackweld the bolt heads directly to the bed, this works just as well if you have a bedliner or not particularly concerned with appearance.
Use liberal amounts of penetrant, that's a given.
