Absolutely take it to a regular shop! I've had two other evaporator cores replaced, neither by the dealer, and had no problems with either one.
$1100 from the dealer isn't out of line at all. They have to pull the dash to get to it, and that's a lot of labor. If there's anything else broken in there, nows the time to get it fixed (I'm thinking blend door).
But just take it to a place speclizing in a/c, not just a jiffy lube or something. A real garage that knows a/c. Probably be about $700-$800 bucks, so weigh whether or not it's really worth it now. The only thing that will happen is you won't have a/c, and maybe defroster, and you can always have it done later.
