I have a 69 360 and the throtle keeps sticking. Whenever I come to a stop sign and press in the clutch the rpms drop to 1200 or even stay at or go up from the rpm that it was before i pressed the clutch. The recommended idle is 650 and i have it set at 800 because other wise it has trouble running when it is cold. When ever it sticks i tap the gas really quick and that usually gets it to drop to the proper rpm. It is a newly remanufactured two barrel carb. What kind of adjustments do I need to make?

Sounds like a bad fast idle cam, or a bad choke adjustment. The fast idle cams are about $10 and the adjustments are a pain! If its a new to you remanufactured carb I'd take it back and swap it out.
