I might bid on a street dominator intake for my 79 250 w/ 400 but i have a quick question before i do, but dont laugh it might be a stupid one.... could i use a carb other than a dominator with that intake like a 600 cfm or so, 800 is a little steep for a carb otherwise.

Yes Willie, you just have to get a adaptor from the large Dominator carb down to the standard 4 barrel carb,eg- 600cfm to 850cfm. you can get them from most high performance shops. they work fine.

I believe that the Street Dominator is just the name of the intake. It is made by Holley isn't it? It is set up for a standard square bore carb, not a Dominator carb.
