Took a high-speed run from Lowe's to Autozone. Truck still seems to heat-up on the interstate. I've put a Sunpro mech. gauge in it and it was creeping up over 200*. Is this too hot. The engine is preety new as is the radiator and pump. What pressure cap should I use? AutoZone was NO help so I just picked one. It turns out I had a 7lb on there,Probably messed up but I put a 16lb on there. It's about all they has besides a little 3lber.
What do ya'll think?

I alway run caps in the 14lb-16lb range myself. 7lbs is too weak for my liking. It's the pressure that keeps the coolant from boiling out when it gets hot.
As far as temp, what temperature t-stat are you running? Do you have a fan shroud in place? Stock fan or flex? Do you have an overflow tank? All these factors have to be considered. You mentioned the engine, radiator, and waterpump were new so there may not be an issue there. I run a 180* in a stock 360 with no fan shroud, stock fan, and overflow tank. On a hot day, it may creep into the 195*- 200* range, but as soon as I hit open road and increase the air flow it comes back down. One point to consider: if you're not using an overflow, the coolant that blows out of your system when its hot is replaced by air when it cools down.
I have a 351w that is 60 over and it constantly runs hot and I was told that drilling the steam holes in the block would cure my problems. I was told that the excess steam needed to recirculate thru the block just like the 302 and 289.
