I just recently realized that my 87 has a 'check engine' and a 'engine' light. What is the difference b/t the two. I've read that check engine is emissions related so does that make the engine light anything other than emissions?
Are you certain its an "engine" light and not the oil presure "idiot light"? The oil pressure indicator was sometimes shown as an "engine" on older vehicles. 87 was very early in the EEC-IV system application and there may have been odd indicators left over on the dash that Ford just didn't bother to remove when they changed systems. I know my 92 and my 93 have the indicators for "water in fuel" and one or two others that are only used on diesel-equipped trucks. And we all know the Bronco never had one of those. However the same dashboard assembly was used in the Superduty trucks so the indicator exists even if it doesn't get used or have a lamp behind it. The EEC computer only triggers the CEL AFAIK.
Although I can't confirm this, it may be that yours is equipped with a block temperature sensor which is measuring the actual temperature of the block/heads rather than the coolant temperature. This would be useful on a truck that saw servcie in parts of the world that undergo severe winter temps. I'm guessing at this point though.

Ya know what...now that you mention the oil pressure...I think my 'engine' light came on about the time I added mechanical guages to the truck including oil pressure. That would also explain why there are no codes present. I'll have to double check the owner's manual for oil pressure and see what I find. I checked it yesterday and found nothing on the 'engine' light.
