How hard is it to do yourself? I've got access to an autoclub with every tool and lift in the world, so the right equipment won't be a problem?
Are there different kinds of kits? Any easier to install than others?
What about sizes... If I can't go 2" because of clearance in my downtown parking garage and at the airport... Do they make 1" leveling kits? Or is that pathetic to go thru the trouble just for an inch?

None of the levelling kits are difficult to install. Time consuming, but not that difficult. And those autoclub shops are usually staffed with people that can help out a little.

You basically have 2 choices. New springs kit and a spring spacer kit. If you go the new spring route, look for a kit that comes with alignment cams. Both kits are about the same in terms of installation ease.

No 1" kits, sorry. But, there is an easy way to level your truck and keep your roof. Instead of raising the front, lower the rear with new blocks.
