78 bronco engine options
what are the engine options for a 78 bronco full size? and what letter in the vin says what it is? also does california models have special letters in the VIN on a 78 for smog stuff?

351M/400 were the only engine options I beleive. Not sure about the rest. You'll probably get more info in the 73-79 f-series forum as a bronco shares more in common with the 78-79 f-series than with 80+ broncos, just a suggestion.

im trying to figure out if i can get away with ditching these emissions components since i dont live in cali and if california is the only place these were installed for on my 1978

The "S" engine code is for a 400. As far as performance, you can ditch the emission stuff as long as it doesn't create a problem(state inspection) in the state where you live. I have a 78 and the smog stuff was pulled on it before I bought it by a previous owner.
