Water Tempature

Hey guys have a quick question, have a 97 f-150 with 4.6 have put in a autometer mechanical water temp gauge, i am seeing temps of around 195 -200 on the interstate at 70 with temps in the mid 60's, at night temp will drop back to 180 to 185, also in stop and go traffic the temp will rise to around 205 then back down once u get moving a little bit. I am using the stock thermostat, is this normal? Also trans temp is around 165 any input is appreciated thanks Mike.
