I wanna do that one too. It sounds easy enough but really does run like $300 if you scrounge for eBay deals, and $800 or more if you go to the guys who sell DIY conversion parts.

If you have a C6 or an AOD tranny, you're good. If you have an EAOD, shifting is controlled by the computer and you're screwed because the Mustang was not made with an EAOD so the computer has no ability to control the tranny.

So you need:
The right Mustang computer (best I can tell there's an A9L for manual and A9P for automatic), new ignition wiring harness to resequence the fuel injectors, MAF sensor, new sensor harness (unless you REALLY want to do some ugly rewiring), may need speed sensor off the tranny if not present. Take vac line off of MAP sensor. Repinning of the connector is necessary if you didn't get a whole new sensor and ignition harness. The single O2 sensor is removed from the exhaust Y-pipe, buy a second O2 sensor, and put one on each exhaust manifold.

The trouble is that 302/351w use double hoses from the throttle body, which simply cannot be mated to an MAF sensor. This is more problematic than it sounds. There's a part which can join the two throttle body intakes into one hose, but it's discontinued and is a very rare junkyard item. People seem to want to use a Ford Lightning intake, but it lacks an Idle Air Control port so it has to be hacked in.

Good news is, people do seem to consistently get another 15% mpg with it, and report much better throttle response. Unclear if it gets better HP in the end. It will allow you to make upgrades inside the engine though that the SD system wouldn't be compatible with.
