A Ford 7.5 is 'good' until you install a locker and try and do some serious torque-turning on anything larger than 31X10.50 tires... *maybe* at most 32x11.50's... for very long. Buddy of mine found that out... the all-too-hard way. Luckily, the D28 in the front didn't grenade on him (nor did the hubs) and he was able to limp off the trail and home... haha.
Im want to run 32"s without a locker in some minor off roading. Do you think they will gernade? Prolly not, im guessing form what you sed.
The 8.8 is a better choice then the 7.5 but I beat the heck out of my 7.5 in my ranger without problems. I think kernel-panic hit this on the head when he said it's good without a locker.
Hey broncoIInoob, saw your posts on the hub thread. Cheers! Here is a thought about running 35"s yeah they are taller than normal, but it sounds like you are going to take it easy, that includes sharp turns. On the trail though air em down to 15 psi, which should lower their overall diameter about 25%, so you should be able to get by and will have great traction.
I wanted to get 32's for a few reasons. i was also told there the only one that dont rub after a 2" lift. I dont want huge strictly off-road tires for only off roading sence the tire ware factor will be very high. So it would have to be 35" on and off road tires. Which i wouldnt know how they would do at such a low psi. bottom line the tires most be good for on road travel, and ok to good off road sence it will be my daily driver. Will 35's be good on my axle, or even fit on my bronco II lol. BTW im doing a 2" lift if that helps.

Installing lockers in the D28/7.5 is fine... just don't expect to put a high lift on it and abuse the differentials with 33's or 35's for very long... something -will- eventually break... either an axle shaft, a hub, or the ring/pinion set(s).
Truckperformance.com has lockers for the stock axles... I believe lock-rights. Lockers are good for extra grab, especially in the snow/ice and off-road... but where limited-slip diffs allow for slippage, lockers increase the abuse put to the gears. That's all I was trying to make a point about
with me, lockers are out of the qeustion...for now anyway there just too expensive. Heres whats going on. Im running a 2" lift kit and 32" tires. NO lockers..lol. Will they last with mild off roading.
