That's well below the expected boiling point of a 40% ethylene glycol solution under 15 psi, which is about 255 F.
When I measure the temp using an IR thermometer pointed in the area of the sensor behind the thermostat housing I read about 210 F after it's fully warmed up and the vehicle's temperature gauge is right in the middle of normal.
So I guess that 210 F could well be "normal".
