A mechanical oil pressure gauge has a small tube that feeds oil from the engine oil galley directly to the gauge. A mechanical water temp gauge has a capillary tube that is threaded into a water passage on the engine. Electrical oil pressure and water temperature use sending units in the engine and are connected to the engine by wires.
As far as which is better, really a matter of choice. I use electrical gauges on street driven cars and trucks, mechanical on race stuff. IMO mechanical gauges are a bit more accurate, and react faster.

which ever one i decide to choose will they be easy to install?? or do i have to buy adapters and stuff? say on the speedo how would that hook up?? b/c it now hows a little shaft that turns and u plug it in is a mechanical the same way and w/ and electronic how would i hook that up?? same way just have to calibrate it or what?? thanks for the help
