Actually, there is a company that does nothing but. I think it's called Windsor-Fox performance.
They make their living swapping FI engines into non-FI vehicles.
Dave, What engine and tranny are you thinking about swapping in? There is a heck of a lot of difference in the weight of the truck and the stang. A 5.0 will work but won't be much of a puller in the truck and you could have a lite weight tranny.

In the cool still quiet of night you can hear chevies rusting away.
I'd say if you are swapping in a modern truck 5.8L that you'd have the sensors and computer from the donor. The biggest hurdle will be figureing out how to plumb the highpressure fuel delivery from the tanks to the fuel rails. EFI requires somewhere in the range of 40 to 60 psi fuel pressure and uses in-tank pumps, high pressure line and a return line to the tank. Whereas most mechanical fuel pumps run closer to 6psi. If you were to carburate it, you'd be OK but?? My understanding is that the desirable 351W heads are from 69 not the 80s' or 90's. Maybe a new enough 5.8L would have a roller tappet cam and lifters. That would be cool. Think out the fuel tank/pump/plumbing hard before attemting an EFI swap, and use computer/sensors/engine from the same donor truck. There are some good books to educate you on EFI, it's a whole 'nuther world that needs to be understood if you wade in. I have heard lots of complaints about many of the 90's era transmissions. The 5 sp manuals are delicate, most are made by Mazda unless you have a 460 w/ a ZF. Some of the OD automatics have been problematic too and again, it may be computerized depending on the vintage, and need the same computer you got w/ engine. You can always find yourself a small-block C6. That would work well.
Dave, Your truck probably had a FE in it if it came with a V8. Putting a 390 back in would be an excellent choice. If the truck came with a I-6, a 351W should bolt up to your tranny. Both of those are good truck motors.
IMHO of course
