I installed the same thing about 3 months ago.
I usually see 500-900*F on the pyro, give or take. Keep in mind this is after the turbo!
I tend to see 100-150*F on the tranny temp. Maybe 200*F if I'm towing on a warm day. Now that it's getting colder out (20's) I tend to see the needle lean more towards 100*F then 150, trannys have a wide range of "normal" operating temps. The biggest factor is how warm it is outside.
For a 7.3 Stroker, 7 psi is decent for running bobtail. You'll see more boost when you tow something somewhat heavy, or with a lot of wind drag. The 7.3's only can produce about 15-17 psi stock. From what I hear if the make more then that, they'll blow their head gaskets.
Hope this helps!

I try not to exceed 1200 degrees. I read that the 7.3 Powerstroke can sustain a maximum of 1270 degrees for and extended period, but I don't like to push it that hard. I see about 1000-1100 max when towing a 14k 5th wheel camper. I was bucking a lot of wind on the way home yesterday and had to kick out "OD", to keep the EGTs low and gain a fair rate of acceleration. I see 20-25# of boost under hard acceleration (empty, on flat ground). I use a regulator on the boost pressure line to prevent the "check engine" light. I have read in this forum that the stock head gaskets can handle up to 40 psi. You won't see that much with a stock turbo.
