Ford added something to the 05 Escapes to reduce noice but the 01-04 Escapes are noisier. I've heard of people spraying undercoating and adding dynamat but it hasn't helped much.
I reduced a lot of noise in my 02 when I switched tires. I don't drive offroad or in snow so put on a decent set of highway tires. This may not be an option for you but offroad and a/t tires make a lot of noise.
My 05 isn't as noisy but I can't see they've added anything underneath (undercoating). I know one issue in the 01-04 was wind noise. My 05 has various rubber/foam pieces between the door and body which I assume was to reduce road noise.
