You can't go wrong with Rabestos brake pads and shoes you also really can't go wrong with factory Motorcraft brake parts.
The problem you are going to have is those bigger tires are going to over tax the 1/2 ton braking system so you will have problems with brake fade etc. You will want to convert the rear brakes to disk to give you all the stopping power you can get.
Last thing stay away from Bendix brake shoes and pads they used to be good but their quality has gone down the toilet.
