my guess is that the choke plate on the carb is staying closed as the motor warms up. I don't know it could be a fuel problem, since it restarts, right?
I'm a control freak so I like my manual choke myself. I had a simular problem and the bowl level were just set way to low. That was on a Motorcraft Carb.
Few things to check.
1. Fast idle speed. Should be 950-1000 RPM
2. Choke pull off. There's a vacuum dashpot that should pull the choke plate slightly open after it starts. Check by taking the air cleaner lit off, set the choke and start the truck. As soon as the engine starts, you should see the choke plate move maybe 1/8 inch.
3. Choke plate adjustment. There should be just enough spring pressure to close the choke plate.

Choke operation is basically the same, with manual and electrical choke, on a four barrels or two barrel or one barrels.
Convert the choke to and electrical housing choke and run the positive wire from the alternator terminal. Not quite sure if it was the stator side on the alternator. But it should pull 7.5 volts if it is the right terminal on the alternator.
