I replaced the head gasket on my 1978 F-150 with a 351M and when I picked up a new intake manifold gasket from NAPA they gave me a "pan" style gasket. The truck has an Edelbrock Performer intake on it and only has the gaskets at the head and silicone along the block mating surface. The center was open. Is this the correct gasket? Just wanted to check before putting it all together tonight...
Yes, 351M has the pan style intake gasket. I believe Felpro does make one without the pan.... maybe some people prefer it for some reason or another, but whenever I've changed the intake gasket on my 351M it's been w/ a pan style gasket.

i just replaced my intake a while back, and edelbrock recomended that i use the 2 piece gasket that that was supplied. after reading further, it seems that this is not the way to go. stick with the pan type of intake gasket. the reason for this is because of the exhaust crossover in the intake. it gets the bottom of the intake HOT, and when oil splashes up against this hot surface it will stick there and burn up. i believe the proper term is it will coke. this means that the oil will burn up and turn into a hard substance. eventually this hard material will fall into the oil and be circuilated thru the engine, causing engine damage. the 2 piece gasket can be used if you block off the exhaust crossover passage in each head, but this can lead to drivability issues. just easier and safer to stick with the pan in my opinion.
