You should probably take it out for a Sunday joy-ride at least once a month... I know this because I have a BMW that is a garage queen and I've asked this on my BMW forum! I try to take her out for a couple hour ride whenever possible. Even once a month and my baby starts fine, charge the battery back up and runs great! It's tougher during the winter because the car doesn't see snow so I have to wait until I have a nice Sunday afternoon. I've been caught in the snow with that car once or twice, not fun! That's what the expy is for!!!
If you let a car sit too long a number of things will happen... here are just a few that I can think of: the tires will develop flat spots, the battery may lose it's charge, small animals may take up residency in your engine compartment or exhaust and the car will quickly gather a nice coat of dust! I'm sure there are more issues, just can't think right now. If you know it's going to sit for a long time, you need to disconnect the battery, make sure the gas tank is full, wash/wax and cover. Some will even recommend blocks to relieve the weight of the car from the tires. If I can think of anything else, I'll post it up here!

when you do drive her you may want to turn the ac on as well (i've heard from a mech that the ac system will work best if you use it every once and awhile)
also consider diconnecting the batt if she'll be sitting for more than a weeks or two.
I would also add a gasoline preservative, keeps the gas from turning to crap if the truck is sitting for awhile. You may also want to consider selling a kidney and topping off the tank, to prevent excessive condensation buildup inside the tank.
