I have recently encountered a challenge. At low rpm my F-350 7.3 powerstroke has been shutting off while driving. Now it doesn't happen regularly and it seems to start right up. Never had to come to a complete stop. Now a higher rpm's it has a severe hesitation and keeps going. Once again it's not regular. This may only happen 1 or 2 times per tankful. This is my first diesel. I've never heard of this before

yep, those are classic sytoms of a CPS (cam position sensor) going out. do a search in this forum for "CPS", "CMP" or "cam position sensor" and you should find all the info you need. the part is $100.00 to $150.00 and is easy to replace.
