I had a buddie that made some "Jeep Style" doors for his cheeroke, The problem was that the doors didnt fill the hole and match up like a factory set. They sat inward and left a gaping hole where the fender and the door were susposed to meet up.
My advise would be to take a pair of doors, take all the glass out, and the window hardware, then cut out the extra metal and make the doors extra light...
Then cut out the center pins and put in some handle style pins with clips to hold them in.
Depending on your local Fuzz... you might have to leave the "doors" on when on the highways, and remove them for wheeling....
Most states won't allow it but what I'd like to do is get 2 spare doors and cut them across the middle (from left to right) taking the window frame off and then notch the center low but leave the sides so you still have hinges and a latch. It would make a nice low half door that you could see out of easily.
