Does anyone know if it's possible/desirable/feasible to convert a long bed supercab into a short bed supercab? 
I love my truck but its so long. Did Ford even make such a truck?

Yes, Ford did make supercab short beds. You have a couple options:
Shorten frame and get short bed box.
Get supercab short bed frame and swap your parts over.
Sell yours and buy a complete running supercab short bed.
Depends on which route you prefer...

Yes they made them. I have one. Shortening the long bed frame may be easier than finding one. Also, finding a good short box is not easy. Here's a pic of mine.https://www.ford-trucks.com/user_gallery/sizeimage.php?&photoid=9492&.jpg
