I'm just looking around to see what's out there right now, but what type of fuel mileage is typical for a standard cab, short bed 2wd diesel with a 5 speed? I've looked into the 300 I-6, and with the mileage those guys get, I might as well get a V8... How much better are the diesels?

Do a search for 'fuel mileage'. You'll find tons of info. Over the past six months, there have been several threads about mileage, with a lot of folks responding to each thread. That's one of the advantages to this list: Folks respond knowledgeably, and if you're willing to listen, they can save you a boatload of frustration, time and $$$.
All we can do is share with you our mpg from our Trucks, I have a 2005 F-250
Lariet 4x4CC, I'm running the 6.0psd Auto Trans. Just came back from up North
last night. I averaged 18.93mpg to 20.2mpg, Haul a 5'x10' steel trailer loaded.
I can honestly tell you I absoultly LOVE THIS TRUCK, remember this is 4x4, my last Truck a 1994 F-150 2wd exstended cab on its best day got around 12mpg
empty. 5.0 engine. My New ride just turned over 3000 miles. So I feel MPG might even get better. GOOD LUCK!

I have a 94 F250 4x4 super cab long bed with a IDI TD, E40D, 4.10 gears 235/85/16 tires at 80psi. The truck had 122k miles at the start of the trip and a bit over 123k at the end. I drove it back from FL and tested the mileage. Here is what I got...the truck was basically empty...one motorcycle in the bed and pulling a jet ski on a trailer.
Cruise Control set at 70mph (about 2250rpm) --> 13mpg
Cruise Control set at 60mph (about 2000rpm) --> 16.5mpg
Cruise Control set at 55mph (about 1800rpm) --> 21.3mpg
All of the above figures are indicated (as opposed to GPS confirmed etc) and were obtained in very similar moderately hilly conditions on the same day and were tested for more than 100 miles.
I think higher gearing and/or a bigger downpipe/exhaust would help my higher mph/rpm economy a good bit.
