It sounds like your situation is similar to mine- Stock rims and want a bigger tire. I tow heavier loads and am concerned about running 285/75/16 (vs stock 265) due to the 7 inch stock rims. IMO if you are not towing heavy loads, the 285's are fine. I run a studded & siped snow tire in the winter with no issues... but I don't tow heavy loads during the winter.
If you want taller, 255/85/16 will fit on the stock rims but have a slightly lower weight rating (3,000 lbs). At this time, I am relatively convinced that the 285/75/16 is as big as you can install on stock 7 inch rims and the tire pressure should be kept up near the maximum pressure rating, especially when towing. JMO
