The oil pressure "gauge" is nothing more than a glorified idiot light. The sending unit is a simple on/off unit, that is set to "normal operating range". (close @ around 10? PSI) The "gauge" only tells you if it's "in range" or not. If/when not in range, the check engin light should come on.
The engin coolant gauge is variable, and should give you an indication of current temp.
Atleast that's how they work on my '03 E-350 V-10.
