I just threw in some side-gapped plugs into my 351W and the initial test indicates that I jumped from 11 mpg to 13.9 mpg. Awesome!!! I did not feel any "seat of the pants" gain, but then I have trouble feeling the seat of the pants gains even when I know I've freed up another 10-20 HP.
What exactly are side-gapped plugs? Aren't most plugs gapped from the side? I know I could certainly use some mileage gains(getting ~8.1right now, used to be 10-11, then 5 when the choke died).
Slik, could you list the mods you've done. I have the same engine, and need to improve my mileage. Also, do you have the C6, or a manual? When I tried to put on an Edelbrock 600 I had to put a 1" spacer on to clear the exhaust crossover valve under the linkage, but then it wouldn't match with the kickdown rod on the tranny, so I just returned it and got a new choke on the 4barrel holley, but it's still running too much gas. I need some advice. What ignition did you get?

There's a web site (but I don't have it in front of me right now) that explains side-gapping. Basically they cut the tip of the electrode so that looking from the bottom the electrode stops at the edge of the annode. This exposes the entire spark to the combustion chamber to produce additional power.
