I would have to say the 6.0. The only reason that I can give is that a good friend of mine has a 7.3 and I had a V-10 and waited for a year to get a 6.0. He has driven my truck and loves it way better that his. I have never driven a 7.3 but he has never had any problems with his. I have never had any problems with mine either. I love it it has wya more throttle response than his its quicker, and quieter.I Love it and wouldnt trade it for anything. Good luck with your decision. Both are a good choice its whats available and what you can afford.
I recently upgraded from a 2000 7.3L to an 05 6.0L, Much better than the 7.3. Mileage is around 18, stock throttle response and pickup is better than my old 7.3L with a Diablo Predator +60hp. Tranny shifts smoother, rides better. If you can afford it, go 6.0L

NOT EVEN CLOSE THE 7.3 FOR ME
more dependable
longer life
better resale
better mpgs
more low end power
less maint. cost
no egr valve
easier to work on
proven engine
I have had both trucks and loved both of them. I had a 2001 F-250 Supercab shortbed that got around 20MPG on the highway whether pulling or not. Never had one problem with the truck. I now have an 04 F-350 CC LB FX4 and have not had one problem with this truck either. It does not get near the fuel mileage as my 7.3 but it is now doing better since I found a fault of mine which I would rather not say LOL. Haven't figured mileage yet now that I have fixed my mess up. Let's just say it does get better with the hubs unlocked Hehehe. I do like my 6.0 a lot more than the 7.3 but it might just be the truck in general that I like so much more.
I had a 7.3 and got talked into trading for a 6.0. Well to be honest, she pulls circles around the 7.3 when hauling our ski-boat. We love the tow/haul feature in the mountains....but The mileage is worse and that damn EGR valve may drive me insane yet.
