What is the best way to stop the SES light from comming on when I floor it with my "clamp" switch in the on position???

It depends on what's causing the light. If it's overboost you need one of the commonly available overboost eliminator kits. My favorite is the mini-regulator from ITP. If it's exhaust backpressure you can replace the tube and or sensor....or get an EBPS eliminator from SP Diesel. If an ICP error is causing the light you will just have to live with it.
I think the highest probability is overboost. I think you shuld pursue that avenue first.
