I have a 300 inline 6 1994 E250. I noticed that the oil pressure guage was moving erratically. The engine does not overheat but yet the guage reads at half way then goes all the way back to start position.
It may just be the oil pressure sending unit. I am not famillier with the six cylinder engines, but it is probably located near the oil filter. You can remove the sending unit and screw a test gauge in it's place to see what the oil pressure actually is. If it is ok, replace the sending unit.
All of the sending units that I have seen go bad were leaking oil between the metal and plastic part of the sending unit. You may be able to rent a test gauge at Autozone if you or someone you know dosen't have one.
I agree with Gene. Check the sending unit. May just be a loose wire.
I would also change the oil filter just for kicks. I did an oil change on the one I had in the islands, and it started sounding like it was developing an engine knock after a few days. No gage, but it sounded like an oil flow prob.
I change the filter and that stoped it. Stick with the stock Ford filter on those. The bad one I had was a NAPA Gold.....
I wish Ford still put those engines in the van......
