Recently Swapped a 300 to a 302. Done a compression check and the psi varies from around 100 to 120 dry. Done a wet test and the psi jumps up to around 150/160. How big of a job is it to replace the rings in my 1981 carburated 302 and what else might I have to repair. Should I also change the mains and rod bearings. Will I have to hone down the cylinder walls. And can I do all this work myself. I am what you call a backyard mechanic. The 1981 302 only as 60000 km on it.

Go buy the book "How to rebuild your small block Ford". It will tell you everything you need to know. When you take it apart, you can eyeball the ridge at the top of the cylinders, if there is one. If it is small, you can ridge ream and hone the cylinders and re-ring. If the ridge is deep, it should be bored and oversize pistons installed. Go buy the book. It explains all this and will give you lots of confidence when you go to do it. And you will also be better informed when you take stuff to the machine shop.
