I am changing out transmissions and what to know if there is a sleeve at the back of the engine that needs to be removed so that there is room for the torqueconverter. If so do you just break it out or what?
Yes you will need to remove the pilot bushing. They make little pullers for this job. Autozone might have one they will rent you. If your lucky it will be worn out and just fall out!! not likely.....
Its brass. You could chip it out, but that will take forever. The idea with the grease will work just fine. Pack the hole full of grease until you cant get anymore in there. Then find a bolt or any kind of shaft that fits tight in the bushing hole. Whack it with a hammer and sometimes the bushing will come out.

You might be able to grind a grove in it (die grinder small rotory bit) ...and then split the grove with a chisel...then work it our.
