I painted the dash and door pannels of my '80 F350 with spray paint. It looks brand new. The roof and rear of my cab inside is red so the black on red looks really good. If I was you I'd paint it because it will look great after its done.
painting it with regular paint is a bad idea, the sun will break it down quicker and make it spider crack. Ive know many people who have done this. An plastic dye is the best way to go. This is one place on a build i would not take short cuts at because once the paint spyders you can not dye over it. The dye will not adhear to the paint. Only raw plastic which should be scoth brited lightly and degreased before being sprayed.

eastwood is the ticket - the interior dye "paint" is a very good product. I bought some of the generic door panels in black and I was able to spray them Ford gray (Hea! what's wrong with a gray interior?) with excellent results.
Use the cleaner & primer first then the dye and it will work fine.
if your going for black and chrome, get the trims redone in a vinyl, I done my 81 F100 XLT in THREE different materials, take a look thrugh the gallery, if you can't find it let me know I'll email a pic.
Snow, I saw your truck, and that is one sweet ride.....but im still thinkin all black interior would be the best for what i want, and another thing does the dye come in a spray can????
Yes the spray dye for plastic vynal and clothe comes in spray cans you can get them at your local automotive body supply shop. a can goes a long way be sure to clean and degrease then scotch brite it then degrease once more before painting shake can good and use a blocker coat let it dry then use 2 more medium coats for full coverage. If yourying to cover a dark color with a lighter color you must use a primer if you just re dying the same color or a darker color the dye itself will be plenty.
I wouldnt recomend dying it while still in the truck the dash pad and side panels come out with ease
take the dash panel out first it will allow ou to get to the hidden screws on the 2 pillar panels after you got that out mask off your gauge cluster and such to spray the lower dash you can keep this in the truck just be careful. you sould remove the door panels and kick panels as well as sun visors and seat to spray the only thing id recomend spraying in the truck is the lower dash and ,ake sure you take your time to mask off good to avoid overspray on the windows
